Simmer sauces over low heat for at least 20 minutes if possible. Not sure what other Italians do but my mom always add a bit of sugar to the sauce. Use tomatoes, we also uselused diced tomatoes, tomatoes paste, sausages, a huge piece of steak, meatballs, all incorporated in the huge pot of sauce after being cooked in a pan on the stove.
Some people dump the grease and fat from the meat, we added it to the sauce and can be skimmed off later but adds a lot of natural flavor.
